Ingredients

  • 800 g Potatoes peeled and cut into chunks
  • 3 tbsp Olive Oil
  • 1 Lemon juice only
  • 4 Garlic Cloves finely chopped
  • 1 tsp Dried Oregano
  • ½ tsp Dried Thyme
  • 1 tsp Salt adjust to taste
  • ½ tsp Black Pepper freshly ground
  • 1 tbsp Fresh Parsley finely chopped (optional garnish)

Instructions

  • Preheat the oven to 200°C (fan) or 220°C (conventional).
  • In a large mixing bowl, combine the olive oil, lemon juice, garlic, oregano, thyme, salt, and black pepper.
  • Add the potato chunks to the bowl and toss well to coat evenly.
  • Transfer the potatoes to a baking tray in a single layer, ensuring the cut sides face down.
  • Roast in the oven for 35–40 minutes, turning once halfway through, until golden and crispy.
  • Remove from the oven and sprinkle with fresh parsley before serving, if using.
