800 g Potatoes peeled and cut into chunks 3 tbsp Olive Oil 1 Lemon juice only 4 Garlic Cloves finely chopped 1 tsp Dried Oregano ½ tsp Dried Thyme 1 tsp Salt adjust to taste ½ tsp Black Pepper freshly ground 1 tbsp Fresh Parsley finely chopped (optional garnish)
Preheat the oven to 200°C (fan) or 220°C (conventional).
In a large mixing bowl, combine the olive oil, lemon juice, garlic, oregano, thyme, salt, and black pepper.
Add the potato chunks to the bowl and toss well to coat evenly.
Transfer the potatoes to a baking tray in a single layer, ensuring the cut sides face down.
Roast in the oven for 35–40 minutes, turning once halfway through, until golden and crispy.
Remove from the oven and sprinkle with fresh parsley before serving, if using.
