Ingredients

  • 4 large Potatoes Peeled and grated
  • 1 Onion Finely grated
  • 2 Eggs
  • 4 tbsp Plain Flour
  • 1 tsp Salt
  • 1/2 tsp Black Pepper
  • Oil For frying

Instructions

  • Grate the peeled potatoes finely using a grater. Place the grated potatoes in a clean kitchen towel or cheesecloth and extract as much liquid as you can.
  • Combine the finely grated potatoes, finely grated onion, eggs, flour, salt, and black pepper in a mixing bowl. Stir thoroughly until all the ingredients are evenly incorporated.
  • Allow the mixture to rest for 15 minutes. This aids in the release of excess moisture from the potatoes, resulting in crispier pancakes.
  • Heat a generous amount of vegetable oil in a large frying pan over medium-high heat.
  • Take a spoonful of the potato mixture and carefully deposit it into the hot oil. Gently flatten it with the back of the spoon to create a pancake shape. You can prepare multiple pancakes simultaneously, but avoid overcrowding the pan.
  • Fry the pancakes for approximately 4-5 minutes on each side, or until they attain a golden brown and crispy texture. Adjust the heat as necessary to prevent burning.
  • Remove the cooked potato pancakes from the pan and place them on a plate lined with paper towels to eliminate excess oil.
  • Continue this process until all the potato mixture is utilized, adding additional oil to the pan as required.
