Bhindi Masala

Okra curry is popularly known as bhindi masala, a delicious and creamy vegetarian curry. Healthy and gluten-free, tender okra chunks coated in a flavourful and aromatic masala, made creamier with a dash of yoghurt.

Ingredients
  

  • 500 g Okra Bhindi
  • 50 ml Oil
  • 2 Onions
  • 3 Tomatoes
  • 1 tsp Garlic Paste
  • 1 tsp Ginger Paste
  • 1 tsp Salt
  • 1 tsp Chilli Powder
  • 1 tsp Turmeric Powder
  • 1 tsp Garam Masala
  • 100 g Yoghurt
  • 2 tbsp Water

Instructions

  • Heat the oil in a pan on medium heat until hot
  • Add the garlic paste and ginger paste then sauté for 1-2 minutes until fragrant
  • Add the finely sliced onions and cook on medium heat for 3-4 minutes
  • Add the chopped tomatoes and cook for 2-3 minutes
  • Add the salt, chilli powder, turmeric powder and garam masala then cook the spices for 3-4 minutes – add the water to allow the spices to release the colour and
  • Add the yoghurt then mix immediately to prevent curdling and cook for 4-5 minutes
  • Add the chopped okra and mix into the spices then cover and cook on low heat for 8-10 minutes until the okra is tender
  • Serve alongside some homemade chapatti and enjoy!
