150 g Plain Flour 1 tsp Garlic Powder 1 tsp Smoked Paprika ½ tsp Ground Black Pepper 1 tsp Sea Salt 250 ml Water 1 Medium Cauliflower Cut Into Florets 2 tbsp Olive Oil 100 ml Hot Sauce 20 g Unsalted Butter Melted, for the Sauce
Preheat the oven to 220°C (fan 200°C). Line a baking tray with parchment paper.
In a mixing bowl, whisk together the plain flour, garlic powder, smoked paprika, black pepper, and sea salt.
Gradually pour in the water while whisking until a smooth batter forms.
Dip each cauliflower floret into the batter, allowing excess to drip off, then place on the prepared tray.
Drizzle the battered cauliflower with olive oil.
Bake in the preheated oven for 20 minutes, turning halfway through for even browning.
Meanwhile, in a small saucepan over low heat, combine the hot sauce and melted butter. Stir until well blended, then remove from heat.
Remove the cauliflower from the oven and brush generously with the buffalo sauce.
Return to the oven and bake for a further 10 minutes until crisp and lightly caramelised.
Serve hot with a cooling dip of your choice or fresh celery sticks.
