Ingredients

  • 150 g Plain Flour
  • 1 tsp Garlic Powder
  • 1 tsp Smoked Paprika
  • ½ tsp Ground Black Pepper
  • 1 tsp Sea Salt
  • 250 ml Water
  • 1 Medium Cauliflower Cut Into Florets
  • 2 tbsp Olive Oil
  • 100 ml Hot Sauce
  • 20 g Unsalted Butter Melted, for the Sauce

Instructions

  • Preheat the oven to 220°C (fan 200°C). Line a baking tray with parchment paper.
  • In a mixing bowl, whisk together the plain flour, garlic powder, smoked paprika, black pepper, and sea salt.
  • Gradually pour in the water while whisking until a smooth batter forms.
  • Dip each cauliflower floret into the batter, allowing excess to drip off, then place on the prepared tray.
  • Drizzle the battered cauliflower with olive oil.
  • Bake in the preheated oven for 20 minutes, turning halfway through for even browning.
  • Meanwhile, in a small saucepan over low heat, combine the hot sauce and melted butter. Stir until well blended, then remove from heat.
  • Remove the cauliflower from the oven and brush generously with the buffalo sauce.
  • Return to the oven and bake for a further 10 minutes until crisp and lightly caramelised.
  • Serve hot with a cooling dip of your choice or fresh celery sticks.
