250 g Shrimp Peeled and Deveined 100 g Plain Flour 2 tbsp Cornflour 1 tsp Baking Powder 1/2 tsp Salt 1/4 tsp Black Pepper Ground 1/4 tsp Cayenne Pepper Optional 1 Egg Beaten 150 ml Cold Water 1 tbsp Lemon Juice Freshly Squeezed 2 Spring Onions Finely Chopped 1 Red Chilli Deseeded and Finely Chopped 1 tbsp Fresh Coriander Chopped Vegetable Oil For Frying
In a large mixing bowl, combine the plain flour, cornflour, baking powder, salt, black pepper, and cayenne pepper.
In a separate bowl, whisk together the beaten egg, cold water, and lemon juice.
Gradually add the wet ingredients to the dry ingredients, mixing until you get a smooth batter.
Fold in the chopped spring onions, red chilli, fresh coriander, and shrimp until well incorporated.
Heat the vegetable oil in a large frying pan over medium-high heat.
Once the oil is hot, drop spoonfuls of the batter into the pan, flattening them slightly with the back of the spoon.
Fry the fritters for about 2-3 minutes on each side, or until they are golden brown and crispy.
Remove the fritters from the oil and drain on kitchen paper.
