Ingredients
  

  • 250 g Shrimp Peeled and Deveined
  • 100 g Plain Flour
  • 2 tbsp Cornflour
  • 1 tsp Baking Powder
  • 1/2 tsp Salt
  • 1/4 tsp Black Pepper Ground
  • 1/4 tsp Cayenne Pepper Optional
  • 1 Egg Beaten
  • 150 ml Cold Water
  • 1 tbsp Lemon Juice Freshly Squeezed
  • 2 Spring Onions Finely Chopped
  • 1 Red Chilli Deseeded and Finely Chopped
  • 1 tbsp Fresh Coriander Chopped
  • Vegetable Oil For Frying

Instructions

  • In a large mixing bowl, combine the plain flour, cornflour, baking powder, salt, black pepper, and cayenne pepper.
  • In a separate bowl, whisk together the beaten egg, cold water, and lemon juice.
  • Gradually add the wet ingredients to the dry ingredients, mixing until you get a smooth batter.
  • Fold in the chopped spring onions, red chilli, fresh coriander, and shrimp until well incorporated.
  • Heat the vegetable oil in a large frying pan over medium-high heat.
  • Once the oil is hot, drop spoonfuls of the batter into the pan, flattening them slightly with the back of the spoon.
  • Fry the fritters for about 2-3 minutes on each side, or until they are golden brown and crispy.
  • Remove the fritters from the oil and drain on kitchen paper.
