200 g Coconut Desiccated 200 g Caster Sugar 3 Egg Whites 1 tsp Vanilla Extract 1 pinch Salt
Preheat your oven to 160°C (325°F) and line a baking tray with parchment paper.
In a mixing bowl, combine the desiccated coconut and caster sugar.
In a separate bowl, whisk the egg whites until they form stiff peaks.
Gently fold the whisked egg whites into the coconut and sugar mixture. Add the vanilla extract and a pinch of salt. Mix until well combined.
Using your hands or a spoon, shape the mixture into small mounds and place them on the prepared baking tray.
