  • 400 g Sweetcorn Drained
  • 1 Red Bell Pepper Diced
  • 1 Red Onion Finely chopped
  • 1 Cucumber Diced
  • 1 Coriander Finely chopped
  • 1 Lime Juiced
  • 3 tbsp Olive Oil
  • Salt To taste
  • Black Pepper To taste

Instructions

  • In a spacious bowl, combine the drained sweetcorn, finely chopped red onion, diced red bell pepper, diced cucumber, and chopped cilantro.
  • Whisk together the lime juice, olive oil, salt, and pepper in a smaller bowl. Adjust the seasoning according to your taste.
