Ingredients
  

  • 500 g Rice Cooked, cooled
  • 4 Eggs Beaten with salt and pepper
  • 2 Shallots Finely chopped
  • 4 cloves Garlic Minced
  • 2 tbsp Oil
  • 2 tbsp Soy Sauce Light
  • 2 Spring Onions Thinly sliced

Instructions

  • In a bowl, whisk the eggs with salt and pepper and set aside.
  • Heat the vegetable oil in a wok or large frying pan over medium-high heat.
  • Stir-fry the chopped shallots and minced garlic for 1-2 minutes until they become fragrant and slightly browned.
  • Add the beaten eggs to the pan and scramble until fully cooked.
  • Add the cooked rice to the pan and stir-fry for 3-4 minutes while breaking up any rice clumps using a spatula or wooden spoon.
  • Pour soy sauce over the rice and stir-fry for an additional 1-2 minutes, coating the rice evenly with the sauce.
  • Toss in the sliced spring onions and stir-fry for another 1-2 minutes until the onions become tender but still crispy.
  • Serve hot and enjoy!

Notes

  • To ensure the rice is not too soft and sticky, it's best to use leftover rice that has been refrigerated for a few hours. If you don't have leftover rice, you can cook fresh rice and spread it out on a baking tray to cool before using it in the recipe.
  • Shallots are a milder alternative to onions and add a delicate flavour to the dish. However, if you don't have shallots, you can use onions instead.
  • Beating the eggs with salt and pepper before cooking them helps to season them evenly and creates a more uniform texture.
  • Soy sauce is a classic seasoning for egg fried rice and adds a salty, umami flavour to the dish. Be sure to use a light soy sauce so it doesn't overpower the other flavours.
  • Spring onions add a fresh crunch and onion flavour to the dish. You can add them to the pan with the rice or use them as a garnish at the end.
  • You can customize the recipe by adding other vegetables or proteins of your choice, such as diced bell peppers, carrots or sliced mushrooms. Just be sure to cook them before adding them to the rice.
