Pasta Salad

This is a fresh and simple pasta salad with crisp vegetables and fresh basil tossed in a simple homemade dressing. Bound to be a hit at any BBQ or party, this is the ideal side dish.

Ingredients
  

  • 500 g Pasta Fusilli
  • 200 g Cherry Tomatoes Halved
  • 50 g Olives Pitted and halved
  • 2 tbsp Olive Oil
  • 1 Cucumber Diced
  • 1 Red Bell Pepper Diced
  • 1 Yellow Bell Pepper Diced
  • 1 Red Onion Diced
  • 15 g Basil Chopped
  • Salt To taste
  • Black Pepper To taste

For the dressing:

  • 50 ml Olive Oil
  • 30 ml Red Wine Vinegar
  • 5 ml Dijon Mustard
  • 1 clove Garlic Minced
  • Salt To taste
  • Black Pepper To taste

Instructions

  • Cook the pasta according to the package instructions in a large pot of salted boiling water, until al dente. Drain and rinse with cold water.
  • In a large bowl, combine the cooked pasta, olive oil, diced cucumber, bell peppers, red onion, cherry tomatoes, black olives, and basil leaves. Season with salt and pepper, to taste.
  • In a small bowl, whisk together the extra-virgin olive oil, red wine vinegar, Dijon mustard, minced garlic, salt, and pepper, until well combined.
  • Pour the dressing over the pasta salad and toss until well coated.
  • Serve the pasta salad cold, and enjoy!
