  • 150 g Butter Unsalted, Softened
  • 150 g Sugar Granulated
  • 1 Egg
  • 200 g All Purpose Flour
  • 25 g Cocoa Powder
  • 1 tsp Coffee Granules
  • 1/2 tsp Baking Powder
  • 1/4 tsp Salt
  • 100 g Chocolate Chips Dark


  • In a mixing bowl, combine the softened butter and granulated sugar until they become light and fluffy.
  • Add the egg into the mixture, ensuring a thorough combination.
  • In a separate bowl, sift together the all-purpose flour, cocoa powder, instant coffee granules, baking powder, and salt.
  • Gradually add the dry ingredients into the wet mixture and stir until a cohesive cookie dough forms.
  • Add the dark chocolate chips to the dough, mixing them evenly.
  • Cover the dough and place it in the refrigerator for a minimum of 30 minutes to allow it to firm up.
  • Preheat your oven to 180°C (350°F) and prepare a baking sheet by lining it with parchment paper.
  • Scoop out small portions of the dough and shape them into 1-inch balls.
  • Place the dough balls on the prepared baking sheet, ensuring they are spaced a few inches apart.
  • Bake in the preheated oven for approximately 12 minutes or until the edges have set while the centres remain slightly soft.
  • After baking, let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
