These Herb & Garlic Roasted Potatoes are the perfect side dish for any meal. With crispy edges and a rich, savoury flavour from fresh herbs and garlic.

peeled and cut into even chunks

Instructions
Preheat the oven to 200°C (180°C fan) or 400°F.
In a large bowl, combine the olive oil, minced garlic, dried thyme, dried rosemary, salt, and pepper.
Add the potato chunks to the bowl and toss them in the seasoned oil mixture until they are well coated.
Spread the potatoes evenly on a baking tray, ensuring they are in a single layer.
Roast in the oven for 40–45 minutes, turning halfway through, until the potatoes are golden and crispy on the outside and soft on the inside.
Remove from the oven and serve immediately.
